Walnut Maple Cookies

Grain-free | Gluten-free | Dairy-free | Naturally Sweetened

These soft, chewy cookies are a cozy blend of toasted walnuts, pure maple syrup, and real vanilla—with a touch of dark chocolate to make them extra special. They’re free of grains, gluten, and dairy, but full of flavor and nourishing ingredients. They’re a favorite with everyone—whether or not they follow a gluten-free or grain-free lifestyle.

🛒 Ingredients

  • 2½ cups walnuts, ground in a food processor
  • ⅔ cup cassava flour (buy here)
  • 1 teaspoon sea salt
  • ⅓ cup flaxseed meal
    • Tip: For the freshest flavor and highest nutritional value, buy whole, organic flaxseeds and grind them fresh in a coffee grinder.
  • ½ cup Hu chocolate chips (buy here)
  • ½ cup + 2 tablespoons maple syrup or coconut syrup (buy here)
  • 2 teaspoons vanilla extract

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix ingredients in the order listed. Stir well to form a sticky dough.
  3. Line a baking sheet with parchment paper.
  4. Drop dough by the spoonful onto the baking sheet and gently flatten with a fork.
  5. Bake for 12–25 minutes, or until the edges are golden brown.
  6. Let cookies cool completely on the baking sheet before removing.

🕒 Note: Baking time varies depending on the oven and cookie size. Start checking around 12 minutes—if you prefer a crispier cookie, leave them in longer until they reach a rich golden color.
