They’re free of grains, gluten, and dairy, but full of flavor and nourishing ingredients. They’re a favorite with everyone—whether or not they follow a gluten-free or grain-free lifestyle.
🛒 Ingredients
- 2½ cups walnuts, ground in a food processor
- ⅔ cup cassava flour (buy here)
- 1 teaspoon sea salt
- ⅓ cup flaxseed meal
- Tip: For the freshest flavor and highest nutritional value, buy whole, organic flaxseeds and grind them fresh in a coffee grinder.
- ½ cup Hu chocolate chips (buy here)
- ½ cup + 2 tablespoons maple syrup or coconut syrup (buy here)
- 2 teaspoons vanilla extract
👩🍳 Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix ingredients in the order listed. Stir well to form a sticky dough.
- Line a baking sheet with parchment paper.
- Drop dough by the spoonful onto the baking sheet and gently flatten with a fork.
- Bake for 12–25 minutes, or until the edges are golden brown.
- Let cookies cool completely on the baking sheet before removing.
🕒 Note: Baking time varies depending on the oven and cookie size. Start checking around 12 minutes—if you prefer a crispier cookie, leave them in longer until they reach a rich golden color.
