Crust

  • 1.5 cups almond flour
  • 2 tbsp coconut flour
  • 3–4 tbsp melted coconut oil
  • 1–2 tbsp maple syrup
  • Pinch of salt

Pumpkin Cheesecake Layer

  • 1.5 cups pumpkin purée
  • 1/3 cup maple syrup
  • 1/4 cup coconut cream (full-fat)
  • 3 tbsp coconut oil
  • 2 tbsp arrowroot or tapioca
  • 1.5 tsp pumpkin pie spice
  • 1.5 tsp vanilla
  • Pinch of salt

  1. Mix all crust ingredients in a bowl until a dough forms. Press firmly into a lined loaf pan.
  2. Blend all filling ingredients until completely smooth.
  3. Pour filling mixture over crust and smooth the top.
  4. Chill for at least 4 hours, or until fully set. Slice into bars.
